Hibachi-style dinner without the Kabuki-style price

This recipe is one of the simplest I know. After watching the chefs at Kabuki or Sakura stir-fry some fresh food, I always kick myself for paying $15-20 for a plate of food that probably cost the restaurant $5-7 in ingredients.

Cook this on your own and it takes 30-40 minutes. Try it with a friend – one person take veggies, or rice and chicken – and the recipe will take no more than 30 minutes.

As with all my recipes, if you don’t like a certain ingredient just leave it out or substitute it. I’ll start with the break-down of ingredients and prices.

Ingredients:

2-3 Zucchini Squash – $1.94

1 medium white onion – $.77

Sliced mushrooms – $2.59

2 cups white rice – $.77

1 small can mixed corn, green beans, and carrots – $.78

Soy sauce – $2.12

Chicken – $4-6

2 eggs – $.30

Vegetable oil

Butter

Garlic powder

Salt & pepper

 

Hopefully you already have the oil, butter, garlic powder, salt and pepper in your kitchen, but if not, they will only add a few more dollars to the total. So far this meal is at $13.27. Let’s get cooking!

 

Rice Pt. 1

Cook 2 cups of rice with 4 cups of water and a pinch of salt. (I like to rinse my rice before cooking it, but this isn’t required.) Either cover and boil the rice on the stove on low heat until all the water is absorbed, or heat covered in the microwave for 18-20 minutes, then let stand 3 minutes.

 

Veggies

While the rice is cooking, chop the onion and slice the zucchini into squares. Heat some oil on medium and sauté the onion and zucchini. Before vegetables are done, add a spoonful of butter, pinch of salt, pepper, and pour in some soy sauce (use your own judgement of quantities with soy sauce). Stir fry it all until onions are browned and zucchini is tender (8-10 min. total). Remove from pan.

 

Chicken and Mushrooms

Cut the chicken into cubes and season with garlic powder, salt and pepper. Cook the chicken in the same pan with some fresh oil on medium. When chicken is almost done, add the mushrooms. Add a spoonful of butter, pepper, a sprinkle of garlic powder, and soy sauce and stir fry until done (about 12-15 min. total).

 

Rice Pt. 2

You may need a larger pan to stir fry the rice in. Heat oil on medium-high and add two eggs. Scramble the eggs for about one minute until they are no longer runny, and add the steamed rice and drained can of veggies. Stir fry the rice on high for about three minutes, then add a spoonful of butter, salt, pepper, and soy sauce. Continue to mix and add more soy sauce for about 5-6 more minutes until the rice is nicely browned.

That’s all there is to it! I like to pretend I’m a Hibachi chef while cooking this meal, but sadly when I set my onions on fire or throw pieces of chicken across the room it is not intentional.
